Possible to set the 'Last Email' field updates as a nightly batch job so they are updated without causing record issues

Is it possible to run the 'Set the "last Email" fields' as a nightly process instead of happening during the day? We would like to be able to report on the emails but we turned it off a while back because it was causing records being locked for our sales people. I think if it was a nightly process it would allow us to not run into issues with the records getting locked.
